Ze ak Bannann (vegan eggs and plantains)

If you’ve been looking for a scrambled egg substitute and tofu isn’t cutting it, get into Just Egg! The fluffiness, the flip-ability, the color …all like a real egg. Kinda weird, super tasty!


Please be creative with this one! Like any scramble, you can add as many or little veggies and meat and cheese as you’d like. ENJOY.


Just egg, bell pepper, field roast sausage, green onions
1. Ze ak piman sur bannann

Just egg, tomato, beyond ground beef, green onions
2. Ze ak tomates y zaboka sur bannann




Serving Size: 1 person


Ingredients:

Ze | Scrambled Eggs

  • Just Egg

  • 2 Green onions

  • 1/2 Bell pepper

  • 1 Tomato

  • Plant-based meat (beyond ground beef or field roast apple sage sausage)

  • All purpose seasoning

  • Expeller Pressed Safflower Oil


Bannann | Boiled Plantain

  • 1 yellow plantain (for a little sweetness) or green plantain (for more starchiness)


Directions:

Ze | Scrambled Eggs

  1. Add oil to frying pan (coat bottom)

  2. Cut up field roast sausage and sauté

  3. Add veggies to pan

  4. Add seasoning to veggies and meat

  5. Pour 1/3 of just egg in bowl, add a dash of seasoning and whisk

  6. Pour whisked eggs into frying pan with veggies and meat

  7. Flip and fry to your crispy preference

Bannann | Boiled Plantain

  1. Wash, peel, and cut the plantain in half

  2. Add water to a medium pot and boil at medium heat

  3. Add plantain to pot until it is fully cooked through (fork smoothly goes into it)


Serve

  1. Slice plantain on plate

  2. Pour scrambled eggs over plantains

  3. Optional* add vegan cheese on top and sliced avocado on side
