Bon bon (plant-based shortbread cookies)

This might be the easiest recipe we've shared yet. Just a handful of ingredients, one bowl, and a quick bake and you have buttery melt-in-your-mouth cookies that look and taste way fancier than the effort it takes to make them. We used a daisy mold for ours, but you can roll them into balls, press them with your thumb, or roll the dough out and cut them into any shape you like.


These cookies are perfect for last minute gatherings, tea parties, or anytime you want a not too sweet treat with your coffee. Effortlessly elegant.

These rolls are the perfect balance—soft and fluffy on the inside with a little crunch on the outside. The plantain flavor is subtle, but if you want it to really shine, feel free to add more. I love enjoying them with friends and a warm drink—it’s the perfect way to cozy up and indulge.


Serving Size: About 18-20 medium cookies

Baking Time: 12-15 min (until light brown)

Oven Temp: 350 degrees Fahrenheit

Baking Tray: Silicone mold or regular cookie tray



Ingredients:

Dough:

• 2 cups all-purpose organic non-bleached flour

•1/2 cup organic powdered sugar

• 1 cup Miyokos European style salted butter, melted (or any other butter)

• 1 teaspoon vanilla extract

• pinch of salt



Directions:

Dough

• Cream the butter and sugar in a large bowl until smooth and fluffy then mix in the vanilla extract.

• Fold in the flour and pinch of sea salt gently until just combined. Do not overwork the dough because that is the secret to tender cookies.

• Press the dough into a mold for a pretty shape or roll into balls and press the center with your thumb or a fork. Chill for 30 minutes to help the cookies keep their shape.

• Preheat the oven to 350°F. Place cookies on a lined baking sheet and bake for 12 to 15 minutes until the edges are just starting to turn golden.

• Let the cookies cool on the baking sheet for 5 minutes then transfer to a wire rack. Dust with extra powdered sugar for a pretty finish or enjoy them warm right off the tray.



Flavor Play

Add a teaspoon of lemon or orange zest for a citrus feel. Mix in a little dried lavender for a tea-party moment. Sprinkle in a pinch of cardamom or cinnamon for a cozy breakfast vibe. Once cooled, dip half the cookie in melted dark chocolate for a little indulgence. You get it . Make them your own.
