Avocado Toast w. Sweet Potato Fries and Krem Kajou

Not gonna front, cringing a little cuz it feels very "LA" of me to be sharing an avocado toast recipe but... they're a fad for a reason THE.TOAST.IS.TASTEY. As with any of my recipes and especially this one, feel free to add any additional ingredients/ toppings.


In honor of our EPIS launch, we decided to throw it in every part of our recipe. From inside the dough to on top of the cherry tomatoes! It's in the sweet potato seasoning water and even in our Krèm Kajou (cashew cream). We wanted to put this all purpose seasoning to the test in all forms and as always, it did not disappoint.

Serving Size: 2-4 people


Ingredients:

Fresh Bread

  • 2 cups of flour

  • 2 1/4 teaspoons of Active Rise Yeast

  • 1/4 cup of sugar

  • 1/4 cup of oil

  • 3/4 cup of water

  • EPIS

Avo Toast Topping

  • Avocado

  • Tomatoes

  • Olive Oil

  • Lime

  • EPIS

Sweet Potato Fries + Cashew Cream:

  • 4 Sweet Potatoes

  • Safflower or other High Oleic Oil

  • 1 cup of Raw unsalted cashews

  • 1 tablespoon of Rice wine vinegar

  • 1 tablespoon of Nutritional Yeast

  • 1 slice Lime

  • EPIS


Directions:

Bread

  1. Warm up 1/4 cup of water (lukewarm)

  2. Pour water in mixing bowl and add yeast

  3. Add a pinch of sugar to mixing bowl with yeast. Stir then cover mixing bowl for 5 minutes

  4. Add all the dry ingredients

  5. Add water and half the oil

  6. Knead mixture together

  7. Coat bowl with the rest of the oil and let dough sit in it

  8. Cover mixing bowl with kitchen towel for 15 min to let dough rise

  9. Preheat over to 375 degrees

  10. Remove towel off of bowl, add flour to hands and then fold the dough into itself and knead again

  11. Let dough sit in mixing bowl, covered for another 15 min

  12. Sprinkle cornmeal or flour on base of bread pan (to prevent sticking)

  13. Add dough to bread or baking pan and place in oven

  14. Let bake for 25 min

  15. Take loaf out and brush with oil

  16. Place loaf back in for 10 min

  17. Let cool for 15 min before slicing... I never follow this step but it really allows the bread to get ..bread-like.

Avocado Toast

  1. Slice bread up into 1 inch slices

  2. Add sliced avocado and tomatoes on top of bread

  3. Sprinkle EPIS on top of slices

  4. Squeeze lime juice on top

  5. Drizzle with olive oil

Sweet Potato Fries

  1. Slice the sweet potatoes up into desired thinness

  2. Mix 1 tbs of EPIS in lukewarm water with a squeeze of lime

  3. Pour seasoning water mix over sliced sweet potatoes. Make sure that all potatoes are soaking in water and let soak for 20 min

  4. Pan or Deep fry the sweet potatoes until golden brown / your desired crisp amount

  5. Season fries with EPIS while the potatoes are still hot

Cashew Creme

  1. Add 1 cup of water to bowl with cup of cashews

  2. Add rice wine vinegar, nutritional yeast, and lime juice to bowl

  3. Soak Cashews for 20 min (great to do while frying the sweet potatoes)

  4. Blend everything in the bowl until cashews have become a creamy texture. Add more water for a thinner cream and less for a thicker cream.

Serve

It's always nice to start with two slices of avocado toast and a single handful of fries so that you have enough room to go back for seconds ;) ENJOY
