Not gonna front, this recipe will take some time if you’re making it all at once because, I’m not sending you to the store to pick up a loaf of bread to add plantains to. Yup, we’re making this plantain loaf from scratch and then turning it into Plantain French Toast 😛
Highly recommend making the loaf the night before your brunch because everything else can be prepped and cooked in 25 min.
Serving Size: 2 people
Ingredients:
French Toast
Oat milk
Powdered Brown Sugar (just blend that brown sugar up darling)
Cinnamon
Plantbased butter (or coconut oil)
Apricots (or any fruit)
Simple Syrup
Water
Brown Sugar
Calendula
Directions:
Toast
Coat Frying pan with butter
Cut loaf up into 1 -2in slices
Pick up a slice, dip both sides into oat milk and place in pan (repeat)
Sprinkle cinnamon on slice
Flip the slice once bottom is toasted/golden
Sprinkle cinnamon on toasted side
Remove off of pan once both sides are toasted
Simple Syrup
Add 1/2 cup water, 1/2 cup brown sugar
Optional* Add calendula or herb of choice
Stir until sugar melts
Let cool
Serve:
Place three slices onto plate
Sprinkle powdered sugar on top
Add freshly sliced fruit on top
Make it a full meal by adding some veggies on the side
